Compass celebrates its chefs of the year

Compass Group UK and Ireland has announced the winners at its Senior Chef of the Year and Young Chef of the Year at its annual competition, which showcases the company’s culinary talent with an opportunity for learning, development and networking. The winners were Alex Milligan from Restaurant Associates (senior) and Euan Moss from Chartwells Independent.

Finalists in the senior category prepared three dishes in just over two hours. Milligan’s main course consisted of pan-fried south coast sea bass with cauliflower and pink grapefruit.

The young chefs, meanwhile, were required to prepare two dishes in two hours, reflecting seasonality and creativity. Moss’ s main was hogget served with seasonal vegetables.

'I can’t believe I have won!'
Milligan said: “What an amazing day! It’s been brilliant to be here and learn from other chefs, as well as get the opportunity to demonstrate my ability. I can’t believe I have won, this really does mean so much.”

Moss added: “This was a great experience, thanks to my mentors, especially my exec chef, Kevin Whitlock, and all the judges and organisers. I’m embracing every opportunity and want to continue to learn and develop.”
