In contract catering, equipment failure is often accepted as inevitable. But industry experience suggests many commercial kitchens are replaced years earlier than necessary, not because of technical limitations, but because of avoidable decisions made along the way.

In contract catering, kitchen equipment is frequently replaced not because it has reached the end of its working life, but because it has been allowed to fail. Under pressure to keep services running, breakdowns are treated as unavoidable rather than preventable, despite the fact that many stem from long-standing issues.

The problem often begins at procurement. Budget constraints can push operators towards lower-cost or second-hand equipment that is poorly matched to the volume and intensity of use. While the initial saving may look attractive, appliances that are under-specified or heavily worn are far more likely to break down early. In higher-volume kitchens, newer equipment generally delivers longer life, more reliable performance and stronger warranties, which tends to offer better value over time.”

Even where equipment is correctly specified, daily use frequently shortens its lifespan. Engineers regularly encounter failures caused by grease build-up, blocked filters or limescale damage. These are not sudden faults but gradual declines, often linked to inconsistent cleaning routines or a lack of staff awareness around basic maintenance.

The industry’s continued reliance on reactive repairs compounds the issue. Emergency call-outs are disruptive and costly, yet many could be avoided through planned preventative maintenance. Regular servicing allows wear, airflow problems and declining performance to be addressed early, before they escalate into downtime.

Ultimately, kitchens last longer when operators take a longer view. Equipment that is properly specified, correctly used and consistently maintained will almost always outperform neglected assets, delivering greater reliability, lower lifetime cost and far fewer operational surprises.
