Vacherin wins Ready Steady Cook

The Association of Catering Excellence (ACE)’s Ready Steady Cook competition was held recently at the Skylight in Peckham, London, with the competition celebrating its 25th anniversary. The overall winners were Ben Garnett-Sinclair and Rico Fonseca from Vacherin with a winning menu that included barbecue rump of beef, fermented hispi cabbage, brown butter mash, onion ketchup and gentleman’s relish.

Competing from across the foodservice industry were BaxterStorey, Bennett Hay, Blue Apple, BM Caterers, Genuine Dining Company, Grazing Food, Holroyd Howe, Houston and Hawkes, Lexington, Restaurant Associates, Sodexo and Vacherin. BaxterStorey came second while Houston and Hawkes finished third.

Sarah Prentice, chair of ACE, said: “We haven’t held this event for a few years and we all agreed that now was the right time to completely modernise it. The new cooking format and venue focused on the chefs and guests having fun and networking, which is what ACE is all about.

“Cooking over fire was a big new part of this year’s competition. The smoke, vibe and skyline views made this an incredible event.”
