First student ambassador for Maple from Canada
As part of its education support of young chefs, Maple from Canada UK has appointed Lance Brooks as its first student chef ambassador. Brooks, who completed his level three advanced professional cookery at Halesowen College last summer, beat off stiff competition from other young student chefs from catering colleges across the UK.
They were asked to develop a new recipe using pure Canadian maple syrup and to submit a video of themselves explaining how they put it together. Brooks impressed the judges with his recipe for a vegan jackfruit bao bun, which was accompanied by a TikTok- style video showing the step-by-step process to create his dish.
David Colcombe, chef ambassador for Maple from Canada, said: “Lance impressed us not only with his on-trend vegan street-food-inspired recipe, but with the creative way that he used new media to explain the recipe to the judges. We are delighted to have him on board.”
